Culinary Spice Mixes
5 Spice Seasoning - In a skillet, toast 2 t. Sechuan peppercorns (2 mins). Grind with 6 whole star anise. Pass through a strainer. Mix in 1/2 t. gr. cloves, 1 T. Chinese cinnamon and 1 T. fennel seeds. Grind until a very fine powder. 
BBQ Rub - Mix together 1/2 c. brown sugar, 1/4 c. paprika, 1 T. (each) black pepper, salt, garlic powder, onion powder, 1/2 t. cumin, 1/4 t. cayenne pepper. Pat on meats or sprinkle on vegetables.
Bouquet Garni - Place these ingredients in a double layer of cheesecloth:  1/4 c. dried parsley, 2 T. thyme, 2 bay leaves, 4 peppercorns and 2 T. rosemary. Gather corners together and tie with string.
Cajun Seasoning - Mix 1 (26 oz) carton salt, 2 oz. cayenne, 1/3 c. pepper, 1/3 c. chili powder, 3 T. garlic powder.
Chicken Soup Mix - In a quart jar, layer in this order:  1/4 c. dried onion, 1/4 c. dried carrots and 1/4 c. dried celery. Add 2 c. noodles or rice. Next add 1 t. parsley, 1 t. basil, 1/4 t. (each) garlic powder, sage, thyme, rosemary, 1 bay leaf, 1/3 c. chicken bouillon granules. Place lid on and seal jar with a Food Saver. To make soup, put 7 c. water in a soup pot with the contents of jar. Boil, then simmer for 1/2 hour. Remove bay leaf. Add 1 large can of chicken, salt and pepper. Cook 10 more minutes.
Cider Spice Mix - Mix together 4 c. sugar, 4 t. cinnamon, 1.5 t gr. nutmeg, 1.5 t. gr. cloves. Use 1 T. per quart of your favorite beverage:  apple cider, fruit punch, wine, sangria.
Creole Seasoning - 2.5 T. paprika, 2 T. garlic powder, 1 T. (each) salt, pepper, onion powder, oregano, thyme and cayenne pepper.
Garam Marsala - Combine these ingredients in a small skillet:  2 T. coriander seeds, 1 T. cumin seeds, 1 t. (each) cardamom, peppercorns, fennel seeds, mustard seeds, 1/2 t. gr. cloves, 1-3 chili peppers (to taste). Toast over med-high heat until fragrant. - 2mins. Add 1/2 t. molasses sugar. Grind to a fine powder.
Herbs de Provence - Grind 2 T. rosemary with 1 T. fennel seed. Add 2 T. (each) savory, thyme, basil, marjoram, dried lavender, Italian parsley, 1 T. (each) oregano & tarragon, 1 t. bay powder. Pulse to mix.
Italian Seasoning - Combine in food processor:  2 T. (each) basil, oregano, marjoram, 1 T. (each) rosemary & sage, 1/2 T. (each) thyme, garlic powder, and red pepper flakes. Pulse to mix.
Lemon Pepper - Zest 5 lg lemons and mix with 1/3 c. crushed peppercorns. Spread on parchment lined baking sheet and bake at 170 degrees for 1 hr. Add 1/4 c. sea salt and grind together. 
Mrs Dash - Mix together:  4 t. sesame seeds, 2 t. (each) celery seed, marjoram, poppy seeds, cracked pepper, 1.5 t. parsley, 1 t. (each) dried onion & thyme, 1/2 t. (each) garlic powder and paprika.
Old Bay -  Mix together in a food processor or grinder:  1 T. ground bay leaves, 1 T. celery salt, 2 t. paprika, 1 t. (each) gr. celery seeds, black pepper, white pepper, red pepper flakes, 1/4 t. gr nutmeg, 1/8 t. (each) ground cinnamon, mace, ginger, cloves, cardamom, allspice and cayenne.
Poultry Seasoning - Combine these ingredients:  4 t. sage, 3 t. thyme, 1 t. marjoram, 2 t rosemary, 1/8 t. nutmeg and 1 t. white pepper. 
Pumpkin Pie Spice - Mix 4 t. cinnamon, 1/4 t (each) cloves, ginger, nutmeg and allspice.
Seasoned Salt - Mix 1/3 c. salt, 1.5 t. (each) garlic powder, gr. celery seed, paprika, 1/2 t. (each) onion powder and gr. mustard.
Taco Seasoning - Mix together 3 T. chili powder, 2 T. paprika, 2 T. cumin, 1 T. oregano, 1 T. garlic powder, 1/2 T. salt, 1/2 T. onion powder, 1 t. black pepper.
Tandori Spice - Grind together equal parts:  salt, lemon peel, beet powder, tomato powder, paprika, garlic, cayenne, ginger, coriander, gr. annatto seeds and saffron.
Trader Joes 21 Seasoning Salt -  Mix equal parts together, grind and use:
onion powder, black pepper, celery seed, cayenne, parsley, basil, bay, oregano, thyme, savory, rosemary, cumin, mustard, coriander, garlic, dried carrot, dried orange peel, dried tomato, lemon juice, lemon oil.
Tuscan Herb Mix - In a food processor, combine and pulse these ingredients:  4 T. (each) basil & marjoram, 2 T. (each) garlic, oregano, thyme, rosemary and red pepper flakes.
Winter Soup Mix - Combine 1 c. split peas, 1 c. lentils, 1/2 c. pearl barley, 1/3 c. beef bouillon granules, 1/4 c. dried onions, 2 t. Italian seasonings, 1/4 c. uncooked rice, 2 bay leaves. To make soup:  Put 3 quarts water into a soup pot with mix and boil. Cover and simmer 1 hr. Remove bay leaves and add 1 c. pasta, for the last 15 mins. Add salt and pepper (to taste).
